Confectioners’ Custard

Ummm custard! I am having a bit of overdose of custard recently having made bread and butter pudding with my flatmate and drowning our creation in custard. Custard just make's things sometimes.... makes as in.. It MADE the bread and butter pudding UMM (can't forget that cinnamon too ;D)

So, wanting to make buns, I was wondering what to fill them with. Being on some custard craze.. my answer was CUSTARD! I stumbled upon Kay Ann's Bakery's recipe for confectioner's custard and just had to try it out!

This was her recipe:
(I halved everything)

Ingredients:

  • 250ml whole milk
  • 1/2 teaspoon vanilla extract
  • 3 medium egg yolks 
  • 37.5g caster sugar
  • 12.5g plain flour
  • 10g corn flour
Directions:
  1. Put the milk and vanilla into a saucepan, and bring to a rolling boil (just when the sides starts to boil)
  2. Meanwhile, in a bowl, whisk together the egg yolks and caster sugar until they turn pale yellow.
  3. Whisk in flour and cornflour.
  4. Pour in milk, whisking continuously, then pour back into pan (keep on whisking!)
  5. Whisk whisk whisk all the time, bring to boil over a medium heat until the required consistency.
  6. Cool down if using to fill buns :)
This custard was a simple delight! And so easy to make! I won't be buying store bought custard now I am equipped with my buying in egg bulk ways! And I used semi skimmed milk too and it turned out great! I wonder what would happen if I used the full fat goodness though...
