So, I was looking at recipes for Mushipan and most of them are sweet versions rather than savory, and I was craving something savory after my overdose on sugar xD Sooo being inspired by a version I found of mushipan that had frankfurter sausages as a topping I got my creative mind a ticking!
Recipe:
Batter:
- Half cup of cake flour ( I put a tablespoon of cornstarch and filled the rest of the cup with plain flour as a substitute)
- 1 teaspoon of baking powder
- 1 and half tablespoon of sugar (I used light soft brown sugar)
- 1 egg
- 1 tablespoon of soy sauce
- about 4 tablespoons of water
- 1 generous tablespoon of oil
- 1 teaspoon of sesame seeds (optional)
Topping:
- 1 leaf of green spring onion
- 2 and half cm of chinese sausage.
Directions:
Boil water in rice cooker.
To prepare the toppings chop up green scallions and Chinese sausage into small pieces and combine.
- Whisk together cake flour, baking powder in a bowl.
- In a separate bowl whisk egg and sugar till pale and frothy. Add in oil and whisk. Add in soy sauce and water and whisk.
- Pour the bowl of combined flour in with the egg mixture and whisk.
- Add more water if required to achieve a smooth batter.
- Add in sesame seeds and whisk.
- Put mixture into cupcake papers (around 2 tablespoons in each one)
- Gently press down some filling on top of each one (the cupcakes will rise so if you press the filling lightly into the mixture it will hold better when cake rises)
- Steam in rice cooker for 10-15 mins, until a toothpick comes out clean.
This mixture makes 5 mushipan's around 120kcal each.
To stop the mixture from spilling over the cupcake papers when steaming make sure the cases are stabilized. I just used plastic cups, I cut the cups and used the top half to support my cupcakes :)

The soy sauce flavour is just right, the texture of the dough however is a litttttle dense so I am not sure how to sort that out.. I may have to use less cornstarch... (when will I sub comb and just buy cake flour?! Also try steaming the cakes for longer!! Try the full 15 mins..
Also I would put 2 teaspoons of sesame seeds in next time as I couldn't even see the sesame seeds when I was eating the cakes!
